'Calville Blanc d'Hiver' is certainly one whose fleshed, high in Vitamin C, holds its shape when baked. The appearance of this apple has a certain "lumpy charm" that's so unique, you'll never mistake it for another variety. We like this apple in the orchard as well - seems to perform well in Adams County.
